Mango Yogurt Popsicles

Skip the coconut cream and opt for Greek yogurt to stay cool during the heatwave! Greek yogurt is rich in protein and contains fewer calories and less fat compared to coconut cream. These popsicles are incredibly simple and fast to prepare! Plus, they are delicious and refreshing!

Ingredients
*1 large mango
*2 Cups greek yogurt
*1 scoop whey protein (Optional - you can use plant based protein as well)
*Chocolate for melting (I use two whole bars of dark chocolate)
*1-2 TBSP Coconut oil
*Desiccated coconuts (Optional)
Kitchen Tools
*Blender
*Cutting board and knife to cut the mango
*Pot with a double boiler for melting chocolate
*Small bowl for melting chocolate
*Popsicle mold
*Parchment or wax paper
Popsicle Instructions
Step 1:
Chop the mango and put it in the blender. Add yogurt and protein powder. Blend until smooth.
Step 2:
Transfer the mango yogurt mixture into your popsicle mold and freeze it overnight.
Step 3:
After your popsicles are thoroughly frozen, melt the chocolate and coconut oil in a bowl over a double boiler. Stir occasionally and watch the chocolate closely to avoid burning. Once melted, add some desiccated coconut (about 1/4 to 1/2 cup) and mix well.
Step 4:
Immerse your frozen mango popsicles in the melted chocolate and set them on the parchment paper to harden.
Step 5:
Return the popsicles to the freezer. At this stage, I wrap mine in parchment paper and store them in a glass container with a lid. Alternatively, you can use a ziplock bag.
